Just wanted you to know how much I enjoyed the European Series. I really appreciate the effort that you put into each class, from the menus/recipes to the background pages. It really helps to have the historical reasons behind the cuisine. |

Cuisine of Italy Mini-Series
In survey after survey, Italian food is America's favorite "ethnic cuisine." It's not just
pasta! The delightful flavors of Italy will be explored in these three classes, which
cover pasta-making, risotto, sauces, desserts, and much more:
1. Northern Italy: Liguria, Piemonte, Valle D’Aosta, Lombardia, Veneto, Trentino-Alto Adige,
Friuli-Venezia Giulia: land of polenta and risotto with many surprising
Germanic influences. Contrary to popular belief, not all of Italy chows down on pasta
and tomato sauce. This region, parts of which have belonged to Germany at least once in the
20th century, is home to a wide variety of culinary influences. We will make perfect risotto (learning about the
three popular Italian styles of risotto rice), delicious carpaccio with homemade aioli, and much more.
2. Central Italy: Emilia-Romagna, Tuscany, Umbria, Marches, Lazio, and Abruzzo: The Sunny
Villa Menu: This region, especially Tuscany, is what most Americans think of when
they think of Italian food. Home to classic red sauces and fresh pasta (we'll learn to
make both), Central Italian food is about fresh, local, quality flavors and foods.
3. Southern Italy: Campania, Basilicata, Apulia, Calabria, Molise, Sicily, and Sardinia:
Seafood Italian Style! Southern Italy eats more dried pasta than fresh and is more
likely to put chiles and spices in their food. Seafood is a part of many menus. A
delicious way to finish the tour of Italy!
Classes are fast-paced and often
include appetizers, full meal, and a dessert, all of which we make in class. Students should be
food lovers but need not have outstanding technical skills in the kitchen.
