Just wanted you to know how much I enjoyed the European Series. I really appreciate the effort that you put into each class, from the menus/recipes to the background pages. It really helps to have the historical reasons behind the cuisine. |

Sushi & Japanese Cuisine
New Series Begins in October!
Delve deeper into sushi and the cuisine of Japan in this three-class series we created in response to popular demand.
The first two classes of this series cover sushi in much greater depth than just a single class can. We will work with
many types of fish, learning about fish quality and how to purchase and cut it. We'll use a variety of
different wrappers and make a ton of different styles of rolls and sashimi.
The third class in this series will cover other types of Japanese cuisine, including comforting soups, soba,
and more traditional fareeven though this class covers many dishes you've never had before, it's usually students' favorite
of the series.
Registration Information:
Where: CC House at Beacon Hill.
Who: Taught by Chef Gabriel Claycamp.
When: Three consecutive Thursdays, 6-9 pm, beginning October 4, 2007. Class dates are
10/4, 10/11, and 10/18.
How Much: $225 for three classes; each includes a full meal. Registration is limited
to 10 students.
