Just wanted you to know how much I enjoyed the European Series. I really appreciate the effort that you put into each class, from the menus/recipes to the background pages. It really helps to have the historical reasons behind the cuisine. |

Cuisine of South-East Asia Mini-Series
New Series Begins in October!
Get inspired by the exotic, aromatic flavors of South-East Asia with these three fun classes,
each focusing on a different national cuisine.
Classes are fast-paced and often include appetizers, full meal, and a dessert, all of which we
make during the session. Students should be food lovers but need not have outstanding technical
skills in the kitchen. The three classes are:

1. India: The cuisine of India is one of the most amazing and complex in the world. In
this class we will unravel the tapestry of flavors and spices that make this food unique.
We'll cook lots of classic dishes and do lots of product identification, to make you feel
comfortable with these bold flavors.
2. Thailand: Learn and enjoy some of the lightest and most fragrant food on the planet:
Thai food. We'll discover the aromas and flavors of the Thai kitchen as we work together
to make an incredible menu utilizing ingredients from spicy Thai chiles and homemade curry
paste to fragrant lemongrass and galangal to fresh seafood and more.
3. Vietnam: Learn this delicious, healthy cuisine of incredible aromas. We'll cook a
complete Vietnamese meal, from fresh spring rolls to Pho Bo to Spicy Crispy-Skinned
Tangerine Duck. (Sounds familiar, doesn't it? It's almost exactly the same as
Duck al'Orange. Remember that the French occupied Vietnam for a very long time.) We'll
learn about the herbs and other fresh-flavored ingredients that make this cuisine so
good.

Registration Information:
Where: CC House at Beacon Hill
Who: Taught by Chef Katie Coleman.
When: Three consecutive Fridays, 6-9 pm, beginning October 26. Class dates are
10/26, 11/2, and 11/9.
How Much: $225 for the three classes. Each class includes a full meal. Registration is
limited to 10 students.
