Register for an individual hands-on class and get the same three hours of hands-on learning, the same small class sizes (no more than ten people per class), and a glass of wine, too.

Menu Development Seminar

For the experienced home cook who would like to learn how to create multi-course menus from scratch. This seminar-style class will explore how to create a balanced menu, incorporating a variety of elements in each course. For example, when one must consider the balance of starch, protein, vegetable, and other "types" of courses (expanding on the basic concepts of appetizers, fish course, salad, dessert, etc); the balance of textures (soft/crunchy, crispy/creamy, etc.); the balance of flavors (tangy/spicy/sweet/rich, etc.); and many other factors! Students will conceive of ideas and discuss them in a roundtable format with the instructor and one another. By the end of class each student will have designed his or her own menu and presented it to the class. We will brainstorm, sketch pictures of presentations, and draw on a wide variety of cookbooks as resources. Good resources to have read before class (although not required) include Grey Kunz' The Elements of Taste and Culinary Artistry by Dornenburg and Page (both books can be purchased from Amazon through CC here). This class is designed to go hand-in-hand with our Dish Development course, offered May 3. Please note that this is a seminar, not a hands-on cooking class, although we will still enjoy a full dinner during class.

The Urban Fridge

We'll talk about the foods that many of us normally have on hand and how to cook creatively with them, and we'll also go over a list of great "basic" foods that you should always have on hand to make things easy for yourself, and how to combine those with a few fresh things from the market. We'll cook some great off-the-cuff dishes with these ingredients. This class will be a breath of fresh air for anyone who hates that age-old question, "What should I make for dinner tonight?"

Fresh herbs are a source of intense flavor, color, and vibrancy. They can add a fresh feeling to your cooking—important during fall and winter months when we're not cooking with as much fresh produce. There are so many kinds of herbs; how do you know which to use and how to use them? This class will walk you through all of the major culinary herbs, tasting and smelling as we go and learning about how best to purchase and store each type of herb. Then we will begin to chop, sauté, and infuse, filling the kitchen with heady aromas as we create a delightful meal in which each recipe features fresh herbs.

Fun with Chocolate

It's easy to have fun with chocolate! There's the tasting: sampling chocolates from around the world of different cacao percentages, comparing flavor profiles and deciding our preferences. Then there's the making, experimenting with different flavors for chocolate ganache and chocolate truffles. We'll use a chocolate tempering machine (the way to go for the home chef) to make mendiants and then play with a variety of toppings. Your mouth will water over the instructor's homemade "nutella" and the incredible combination of Flourless Chocolate Cake with Cajeta (Goat's Milk Caramel), Roasted Marshmallow Crème, and Spicy Candied Almonds. This fun class will have you dreaming of chocolate!

Although often overlooked, soup is a fantastic showcase for flavor and ingredients, and summer's bounty provides a bright and wide palette of flavors to work with. Amazingly versatile, soup can be a hint of what's to come in the meal or the meal itself; a big steamy bowl or a magical little sip; an appetizer, entrée, or even dessert. There are a huge variety of techniques for and styles of soup, from the very simple to the very complex. This class will cover the three main categories of soup and discuss what is required for a great soup. We'll focus primarily on light-flavored summer soups, including cold soups such as Chilled English Pea Soup and Gazpacho, as well as many others.

Garnishes
Two-Part Series

For the advanced home cook who's interested in experimenting with garnishing and decorating plates, from appetizers to desserts and more. We will move from a brainstorming seminar to hands-on creation of garnishes and actual garnishment of plates. We'll discuss the "functionality" of garnishes, how to keep the garnish true to the soul of the dish, and other aspects of the philosophy of garnishment. We'll make garnishes such as foams, brittles, herb salads, tuiles, croquants, and more. This two-part series will play on ideas, with suggestions for how to experiment on your own.

Tamales

Feel like some homestyle cooking? Feel like some Mexican food?  Combine your desires! Tamales are traditional Mexican fare, usually made for festivals. A tamal is made of fresh masa with various stuffings, wrapped in a "jacket" of corn husks or banana leaves, steamed, and then eaten with a sauce. They're fun to make, very healthy, and delicious. Of course, we'll finish class by feasting on the fruits of our labors!

The tough part about pie seems to be the crust—no pun intended. Today's class will focus first on pie crusts, demystifying and clarifying the recipes, and getting hands-on practice mixing, rolling, and shaping. You will learn three different crusts: basic pie crust, pâte sucrée (sweet crust), and pâte brisée ("short" pastry, for flaky crusts). You will learn a new rolling technique that eliminates the frustration of trying to get your crust to turn out round. We'll also learn how to make a good pie filling utilizing the best summer produce. Pies are a part of the American mythos, especially for summer. You don't have to cool yours on the windowsill, just join us for this great class and then fill your summer with the mouthwatering scent of baking!

Charcuterie

Charcuterie is the age-old art of preserving meats, primarily pork. Hams and bacons, sausages and pâtés are all part of the charcuterie umbrella. In this fun, five-hour class, we'll make our own bacon, several types of sausages—such as chorizo, Italian, and breakfast sausage—as well as solid pieces like capicola. We'll also work with preserving foods through smoking and we'll make a country-style pâté or rillettes or smoked salmon. You'll come away not only understanding sausage and preserved meats better, knowing what makes a quality product, but also with the ability to create them for yourself. Everyone will go home with two portions of meat that they've cured.

Belly up to the bacon bar, it's time to get our pork on! Bacon has got to be one of the most versatile, not to mention delicious, foods on the planet. Just a little sautéed bacon adds a rich, smoky, hearty, round flavor to anything: salad, soup, veggies, you name it. At tonight's class we will worship at the bacon altar, learning about and enjoying bacon in all its glory. We'll begin by making our own bacon, so you'll understand the process and what's involved; we'll also have a bacon taste-off, comparing different brands and styles of bacon alongside one another. Then we'll cook with bacon, creating dishes from traditional to off-the-wall, including Chef Gabriel's crazy cool bacon ice cream. This class is a tribute to bacon in all its forms!

Finally, the dilemma of how far our food travels to our tables is becoming a widely-known issue. More and more people are realizing that much of our food is shipped thousands of miles to us. This has an enormous effect upon everything from local economies to family farms to the flavor and nutritional value of the food itself. Books like Plenty and Animal, Vegetable, Miracle are bringing this issue even closer to our consciousness. But the general idea of eating locally and the actual practice of how to put together a completely locally-grown meal can be pretty far apart. In an effort to encourage eating locally, we want to help you get creative with local foods. The 250-Mile Diet classes will utilize only foods grown within 250 miles, with the singular exception of salt (until we find a local producer!). In June we're moving toward summer and the availability of produce is beginning to open up. This month we can find artichokes, asparagus, strawberries, pea vines, and delicate salad greens, as well as edible flowers. We'll scour local farms and markets for the best of this fresh new season. Tonight's class focuses specifically on cooking for two: small dishes featuring the best the Northwest has to offer, perfect for sharing. We'll cook a fantastic, varied meal in tonight's class as we talk about working together in the kitchen with your partner and tips to help your evening of cooperative cooking go smoothly. Southern BBQ

Chef Katie is a Southern native who is looking forward to teaching the Pacific Northwest a thing or two about barbeque! There are many different schools of thought about BBQ, from what meat to cook to the type of sauce it should be cooked in and much more. We'll explore several of the more popular variations as we have our own little BBQ cook-off, creating several mouthwatering BBQ dishes and sides. As usual, class ends with a full meal, and none of these sauce recipes are a secret! Prior seasons' menus have included Katie's BBQ Sauce, Memphis Baby Back Ribs, Country Potato Salad, Carolina Slaw, and Peach Cobbler.

Cuisine of Vietnam

Learn this delicious, healthy cuisine of incredible aromas. We'll cook a complete Vietnamese meal, including fresh spring rolls. Vietnamese cuisine is one of the original fusion foods:  the influence of the French occupation of Vietnam extended to affect the traditional food. The bread of Vietnam, for example, bahn mi, resembles a baguette but is made with a combination of rice flour and wheat flour. We'll learn about the herbs and other fresh-flavored ingredients that make this cuisine so good as we work together to cook a delicious meal!

Here in the Northwest, our produce is amazing but fleeting. Learn how to capture the essence of the season through canning, drying, freezing, and pickling. We'll make "Dilly Grass" (Pickled Asparagus), Strawberry Jam, Shallot Marmalade, Fresh Fruit Leather, and much more in this fun class. You'll go home with several portions of preserved goods you've made. We'll enjoy a full meal including some of our creations!
