Private Thai Class, January 2003

Private classes allow you to have a different kind of dinner party experience in your own home,
one in which all the guests not only help out with the meal but also learn to make everything.
Classes are wonderfully enjoyable, as groups of friends, coworkers, or family gather to
create food together.
We taught this Thai class for a group of 12 friends in the hostess's spacious north-end kitchen.
The January day was beautiful and the experience matched. Cooking and eating together was a
delight.

Binders laid out for students before class. Each new student receives a CC binder for class handouts and notes. Several of our students have had to "upgrade" to a larger binder because they've taken so many classes!

Students gather around as Chef Gabriel shows off an ingredient. We passed around some of the
Thai ingredients before we got started cooking so students could feel, smell, and taste.

Everyone gets started with prep tasks, chopping garlic and chiles, washing vegetables, soaking
rice noodles, etc.

Students study recipe cards as the cooking begin. We like to have everyone taste every dish
as it progresses so that we all really understand the progression of flavors.

You will have to imagine the scent of the freshly made red chile paste, the coconut milk and
peanut sauce, the fish sauce and nutty sweet rice.

The day was utterly beautiful, and our lunch table looks gorgeous in the early afternoon
sunlight.

We loaded down the table with Beef Satay Skewers, Pad Thai, Whole Fish with Curry Sauce, Steamed
Sticky Rice, Nam Prik, and more.

Ready to dig in! We worked up an appetite.

Food is passed family style, one of thie little "communion" things that make our classes so
casual and really connect us with one another (even strangers). "Please pass the Pad Thai"
somehow just brings people together!

Everyone was so busy serving and eating that the table was pretty quiet for awhile! After
class, everyone pitched in for a few minutes and the kitchen was returned to its original
spotless condition in next to no time. Good-byes were called with promises to cook together
again soon. All in all, a very successful class!
