Core Values

Food and cooking are pretty broad subjects, and there are more ways to teach people about them as there are shapes of pasta. This is what we think, and how we will approach teaching you. Please also read about our Eco Focus for additional CC Core Values.

Our belief that food generates a basic sort of communion between and among people leads to our commitment to these core values and goals:
- Having fun in the kitchen. We want to emphasize that cooking should be fun, even a way to play. Although there is a proud, professional background to culinary skill, we want students to remember that we learn best through experimentation, trial and error, and that they should never be afraid to let go, be creative, and make mistakes.
- Using all five senses to cook. Too often, cooking becomes a task, and is a factor of schedule and ingredients, not an experience of the bodydespite the fact that food is made to be tasted! Students should learn to appreciate the way all of their senses can help them as cooks, and not be afraid to taste, smell, and interact with the food at all stages of its creation.
- Sharing with others. By simply having a group in the kitchen and sharing our experiences, questions, and sensations with each other, we hope to encourage students to get others involved in their own kitchens, to remind them that cooking is a group activity and that meals are made more enjoyable by the addition of friends and family to the kitchen as well as to the dining table.
- Remembering the spirituality and fulfillment of food. We feel intimately connected with food and its unique magic, its power to feed our souls as well as our bodies. We hope to share this feeling with students by letting them see how strongly food can affect us all, bring us together, and nurture us.
